This cardamom oil is deliciously fresh, subtlely spicy, and intriguingly aromatic. The CO2 extraction process produces an energizing and penetrating olfactory effect that is true to the taste of cardamom seeds from the pods. To extract the cardamom oil, the cardamom seeds are ground in a chilled grinder, which preserves the full range of aromatic cardamom oils that are normally destroyed by heat in typical grinders. Following this, the ground cardamom seeds are extracted using a slowly increasing pressure of CO2 gas, which is a completely non-toxic extraction solvent that leaves no residues.
